Can you please explain how filter media works?

Full Story:

Superficially it’s a simple process where-by a fluid, for instance either drinking or waste water containing suspended solids is passed through a bed of sand which acts like a colander filtering out the particles.

This theory sounds good but how can you reconcile that a sand with an interstitial pore size of, say, 100 microns (one tenth of a millimetre) and can capture particles down to 5 microns (five thousands of a millimetre)?

The answer is demonstrated by a pile of cannon balls. These clearly illustrate how particles “stack” together. As water percolates through a filter the stacking of the sand grains cause it to experience sudden changes of direction, this influences the speed of flow and hence the water's carrying capacity. As the velocity of the water is reduced so is its carrying capacity and fine particles are released from suspension.
